We are in Salento where until a few years ago the olive trees ranged from sea to sea. We had to deal with a bacterium that destroyed twenty-one million trees, including ours. We had to start from scratch but we believe that the bond between our land and the olive trees is indissoluble and therefore we uprooted and replanted all the dead trees and added another four hundred for a total of over a thousand trees. We have been an organic farm for ten years now and we have recently become passionate about the magical world of bees and honey thanks to the help and experience of Uncle Luigi. The first results are very encouraging and we are optimistic for the future. We also have a vegetable garden where the raw materials for our restaurant grow. In a large enclosure we are kept company by geese, chickens, ducks and goats and our mascot: Pinuccia the donkey .
